Vegan Sausage with Spinach & Tomato Pasta

Pasta is one of my favorite meals so when Pure Farms sent me a package over with some of their yummy meals it was time to pull out my chef hat. I wanted make a delicious meat free meal that doesn’t take up too much of my time.

In a large pot of boiling salted water, cook pasta until just al dente I always drizzle oil over the pasta. I use My Chef IQ Smart Pressure Cooker which scales the pasta and tells me how much water or other ingredients I need to add. While I have the pasta in the smart cooker. I’ll sauté the  dinner links on the stove.

Remember with vegan products the meat doesn’t change much color as real meat does when it’s fully cooked so don’t have a little commercial break while these cook or they’ll burn. Make sure to drizzle some olive oil and add the garlic to them. Once you’ve drained your pasta , add the spinach and tomatoes to the pan and cook for a few minutes then add the arrabiata sauce and pasta. Add the bacon seasoning and paprika for extra flavoring.

  • 4 servings of pasta (I used farfalle)

  • 1 teaspoon of Minced garlic or you can use fresh.

  • Cherry tomatoes roughly chopped I used about 10

  • A handful of spinach

  • 2 tablespoons arrabiata sauce

  • 1 teaspoon paprika

  • 1/2 teaspoon Crushed Red Pepper

  • ½ teaspoon of Bacon seasoning

  • 1 tablespoon oil (I used olive oil
