Flavors of Africa: Vegan Meatballs

My creative juices have been flowing lately especially in the kitchen. I wanted to cook a recipe from my friend Evi cookbook Flavors Of Africa I choose to recreate the North African Meatballs but made them vegan using Pure Farmland Meatballs.

The dish can be eaten alone with Couscous or Basmati Rice, I used Coconut Basmati rice to go along with the dish and it definitely complimented the meatballs. The meal turned out so good my friend came back for seconds and she’s not a huge lover of vegan foods.

Ingredients

Meatballs

Vegan Meatballs of your choice( I used Purefarmland)

1 tsp Ground Cumin

1 tsp Ground Cinnamon

1 tsp Ground Coriander

1/2 tsp Ground Cardamon

1 tsp Paprika

1 tsp Salt

1/2 tsp pepper

Olive oil as needed 

Sauce 

2 tbsp of Olive oil

1 clove of garlic minced

1 large onion rough chopped 

2tsp of Ginger minced 

1 tsp Paprika

1 tsp Paprika

2-4 cinnamon sticks (I used ground)

1tsp brown sugar 

1 14oz can of diced tomatoes (I preferred Cherry tomatoes)

2tbsp dried currants 

1 cup of vegetable stock

Optional 

Rice

Couscous
