Vegan Matcha Green Tea Pancakes

So as you all know I’ve been playing chef during quarantine. It’s been pretty fun Trying out new recipes. A few weeks ago 

Zulay Kitchen

 reached 

out to me about a collaboration and as browsed their website I saw they sold

 Matcha Green Tea 

which made me pretty excited because I’ve been wanting to experiment with Matcha recipes.

I was going back and forth trying to figure out what could I make with the

Zulay Matcha Green Tea Powder

 I’m not a huge coffee drinker so trying a Matcha Latte was out of the question.

Since I’ve been on a plant based journey I decided to to Vegan Matcha Pancakes and they’re pretty simple to make.

Ingredients

  • 1 Cup flour

  • I used some leftover simple syrup but you can use regular sugar

  • 1 Tablespoon Baking powder

  • A pinch of salt

  • 1 Cup plant milk (I use Almond)

  • 1 tbsp matcha powder (a little goes a longer war trust me)

  • 1 tsp vanilla or almond extract

Combine all ingredients in a mixing bowl

Pour about ½ cup of batter onto a nonstick pan or griddle over low/medium heat

When the top begins to bubble, flip the pancake and cook until golden.

I love date syrup, but you can use maple syrup, I made a strawberry glaze but this is optional.
